Bread is one of the oldest culinary creations and baking it at home is easy. We loved adding something salty for a kick. Pair this bread with some wine and cheese. This bread can be frozen so you can bake it whenever you want or toast slices.
INGREDIENTS
For a large loaf or two medium loaves
1 baker's yeast sachet or 25 g fresh yeast
1/4 teaspoon sugar
3/4 cup lukewarm water
1 1/2 cups lukewarm milk
1/3 cup of extra virgin olive oil
2 teaspoons salt
650 - 700 g bread flour or plain flour
3 cups of chopped assorted olives
Directions-
In a bowl, dissolve the yeast and sugar in the water. Leave it to sit for 8 minutes. Do not add the salt.
In another separate bowl, mix the milk, oil and salt.
Put the kneading blades in your food processor and add 2 cups of flour, the dissolved yeast and milk and oil mixture. Process on medium speed for one minute.
Add the rest of the flour and process for another five minutes. If the dough is very sticky, you can add a little bit more flour but be careful it does not become too dry.
Place the smooth dough onto a floured surface and knead for three minutes. Make it into a ball.
Grease a large bowl with olive oil and place the dough inside. Cover it with film and leave to rise at room temperature, until it doubles its size (approximately one and a half hours).
Then, knead the dough again to deflate it. Place it on a floured surface and spread it into a disc shape. Place the olives on top of the dough, pushing them in slightly. Then roll the dough so it fits in the baking dish.
Grease the baking dish (terracotta or clay is best) with oil, place the dough inside, cover and leave to rise for another 45 minutes.
Preheat the oven to 350ºF and bake the bread for 40 - 45 minutes.
Take it out of the dish and leave to cool completely on a wire rack.
Add a little bit of butter, grab a glass of white wine, and enjoy!
